As summer begins to peak, most people think it’s too late to start planting new vegetables, but that’s simply not the case. Thanks to South Texas’ long summers gardeners are able to plant many different vegetables as late as July and August and can harvest well into the Fall. Here are just a few vegetables that you can get ready to plant this month.
Kale
Kale is one of the most nutritious foods on the planet. It is a cruciferous vegetable like cabbage, broccoli, cauliflower, collard greens and Brussels sprouts.
Not only can you grow Kale in March and the early Summer, but you can grow start planting kale seeds as early as august can can harvest until the first freeze of the winter.
Lettuce
Lettuce is one of the most versatile foods and one of the easier crops to grow. Lettuce is highly productive in limited space, and is virtually pest and disease free. Lettuce is definitely one of the most low maintenance crops.
Lettuce can planted starting early August and is ready to harvest late October and early November
Peas
Peas require very little maintenance other than watering and harvesting. There are many varieties that are disease and pests resistance so they are rarely a problem. However, For a fall crop, you’ll have to nurse the seedlings through late-summer heat with shade and diligent watering until cool weather arrives.
Peas can be planted in August and can be harvest up until the first freeze of the winter.
